Recipe of the Week – Huevos Ranchero Tri Style

2 eggs
5 seconds pan spray
1 corn tortilla
1/4 cup black beans (mashed with cumin, chipotle powder & 1 tbs of salsa)
1 Tbs salsa
1 scallion, minced
2 tsp cilantro, chopped
1 Tbs shredded reduced fat cheddar cheese
Hot Sauce to taste–I like Cholula Chipotle for this one

1) toast the tortilla in a non stick pan until warm & crispy
2) remove and keep warm
3) heat up mashed black beans–nothing wrong with the microwave here
4) spray the hot non stick pan and crack in your eggs–I think it is best if they are sunny side up with some crispy edges and runny yolks on this dish
5) Build your plate–spread mashed beans on the tortilla, top with eggs, add salsa, cheese, scallion, cilantro, and as much hot sauce as you can stand

Eat–Breakfast in 6 minutes with minimal clean up! I can eat this for breakfast during the week before heading out the door. Way better than MacDonald’s!
